A hydraulic or surge coupler isn't adjustable for the weight of the trailer but strangely enough, they don't need to be. The brakes would certainly be more effective if there were more weight on the trailer, but conversely a lighter trailer doesn't need as much braking force as a heavier trailer would. It sounds like you need to replace the brake actuator on your 1979 Rolco trailer. When you say the hitch portion are you asking about a surge brake coupler on the trailer? These were used a lot on trailers from that time.

The eZ-Latch on the Demco Channel Tongue Trailer Coupler # DM13689-52 does make it easier to connect the trailer and ensure the coupler latches down fully than your trigger style coupler. Since you can visibly see the latch raise and drop you know you are connected. A little bit of play is acceptable, the coupler should be tight enough that the coupler won't come off the ball, but not so tight you can't close the latch. I typically tighten the coupler up until I feel a slight resistance when closing the coupler latch, then I'll back it off slightly from there.

The trick here is to get as close as possible. If you are talking about less than 2 inches or so, there is nothing to worry about. Having the trailer tongue a bit too high is preferable to it being too low.

The Curt Tri-Ball Trailer Coupler Lock for 1-7/8", 2" and 2-5/16" Ball Couplers # C48CR should not be rusting after 6 weeks. I can certainly point you in the right direction. Unfortunately they do not list the coupler height of your trailer online. The hitch on your 2019 GMC Canyon should be right at 19" provided everything is stock. Most trailers have a coupler height around 17", so a 2" drop ball mount like the # 80232 should get you pretty close to level. To find the correct ball mount to tow your trailers you will need to take a couple measurements. There is no industry standard ball mount due to so many variations of trailers and trucks.
First with your truck on level ground measure the distance from the top of the receiver opening to the ground.
Then with the trailer on level ground measure the distance from the bottom of the trailer coupler to the ground.
